4:6 Order of Operations

Here is my order of operations for dialing in a new bean. This is pretty generalized, and there are times it would make sense to change a couple of variables at the same time (It doesn’t always take 5 brews to dial in). But is this a logical outline to follow? Any variables you would add?

18.5g coffee

300g water (120:180 ≡ 4:6)

Kingrinder K6

V60, Hario paper filter

90ºC

Brew 1 (baseline):

  1. Grind at 85 clicks
  2. Pour 1 - 60g
  3. Bloom 45 sec
  4. Pour 2 - 60g
  5. Pour 3 - 90g
  6. Pour 4 - 90g 

Brew 2:

If too sour, grind finer (80 clicks)

If too bitter, grind coarser (90 clicks)

Brew 3:

To ↑ sweetness, adjust pours 1 and 2:

Pour 1 50g

Bloom

Pour 2 70g

To ↑ acidity, adjust pours 1 and 2:

Pour 1 70g

Bloom

Pour 2 50g

Brew 4:

To ↑ strength, adjust last 180g from 2 pours to 3 pours

Pour 3 - 60g

Pour 4 - 60g

Pour 5 - 60g

To ↓ strength, adjust last 180g from 2 pours to 1 pour 

Pour 3 - 180g

Brew 5 (fine-tuning):

If bitter, lower water temp

If acidic, raise water temp
